Ingredients
· 1 cup Mountain High Organics Long Grain Brown Rice
· 2 tbsp olive oil
· 8 oz cremini or white mushrooms, sliced
· 1 small onion, finely diced
· 2 cloves garlic, minced
· 2 cups vegetable broth
· 1 tsp dried thyme
· ½ tsp sea salt
· ¼ tsp black pepper
· 2 tbsp fresh parsley, chopped
· Additional parsley for garnish
Directions
1. Heat olive oil in a large skillet or saucepan over medium heat.
2. Add the mushrooms and onion. Sauté for 6–8 minutes, stirring occasionally, until the mushrooms are golden brown and the onions are tender.
3. Stir in the garlic and thyme and cook for 1 minute until fragrant.
4. Add the Mountain High Organics Long Grain Brown Rice and stir for 1–2 minutes to lightly toast the grains.
5. Pour in the vegetable broth and season with salt and pepper. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 20–25 minutes, or until the rice is tender and the liquid has been absorbed.
7. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and stir in the fresh parsley.
8. Transfer to a serving dish and garnish with additional parsley before serving.
Recipe Tip
For a richer flavor, substitute half of the vegetable broth with mushroom broth or add a sprinkle of grated Parmesan cheese just before serving.
